Can my PS3 play normal DVD's (not Blu-Ray) when it's attached with the HDMI cable?
 
The PS3 can play any disc (CD, DVD, Blu-ray) no matter what cable is connected.

The type of cable connected will determine the best resolution that can be displayed, not what type of media that can be played.
 
Yes, it should, as the connection does not matter. It would be exactly the same if it were conncted through composite, RGB, RGBHV, or RF
 
Yes it will play all types of discs vcd,DVD,blu ray etc; with the HDMI cable but the resolution will be the same as using AV cables etc; and not full HD but will probably be HD if the DVD is in HD so the only downside is it's not as crisp and real like a blu ray
